Description
Cantina Fornacina was founded in 1980 and is located on the outskirts of the city of Montalcino.
Situated on approximately 5 acres of land in total, the Biliorsi family produces wine with an unwavering passion that has been passed down through generations. Fornacina is committed to protecting nature and respecting their land and in 2004, they were awarded the Certification to produce wine from organically grown grapes.
The Sangiovese grapes for their Brunello di Montalcino are harvested in the fall, between September and October, once they have reached ideal ripeness. Once at the winery, the grapes are vinified in stainless steel vats at controlled temperatures. The seeds and skins are then left in contact with the juice for an extended period of maceration with periodic pump-overs.
The wine undergoes malolactic fermentation and then is aged for at least 24 months in Slovanian oak barrels. Once the wine is bottled, it is left to age for an extended 2 years and is made available on the market the 5th year after harvest.

Taste
Sangiovese in its truest expression: tart and dried cherries, red plum, and strawberries. There are notes of black tea leaves, dried red rose petals, cinnamon sticks, tomato vine, and crushed brick. The wine is dry, with elevated tannin and balancing acidity.
