Description
Domaine Gautheron is situated in the village of Fleys, to the east of the town of Chablis, and overlooked by the steep slopes of Les Fourneaux. In 1997, Alain Gautheron (5th generation), joined his father Jean at the family Domaine. At that time, the Domaine comprised 8 hectares of land in total, producing around 10,000 bottles a year. 


By 2000, Jean had retired and Alain was joined by his son Cyril- who helped to modernize the Domaine and winemaking practices. Today, Domaine Gautheron consists of 25 hectares of vineyards spread across Petit Chablis, Chablis, and Chablis Premier cru appellations. Cyril now oversees the daily operations and their annual production has increased to approximately 150,000 bottles. 

Domaine Gautheron holds utmost respect for the land that they have inherited from previous generations. Their farming philosophy reflects this, as they employ Lutte raisonée (“supervised control”) practices; where yields are kept lower by green harvest and pruning and only natural solutions are used to combat pests and diseases. They are dedicated to the preservation of the purity of their land to ensure the continuity of production and philosophy for future generations.

The vines are planted to Chablis’ famous Kimmeridgian and Portlandian soils.  The soil in the village of Fleys’, in particular,  is unique in its particularly high content of fossilized snails. These soils lend to the distinct flavor profile that can be found across the range of wines that Domain Gautheron produces.  

Situated on the right bank, the vineyards receive a good amount of sunlight allowing for optimal warmth to achive ripeness in the grapes. After harvest is complete, grapes are immediately pressed to preserve freshness, then fermented in temperature-controlled vats.  After the malolactic fermentation is complete, the wine rests on the lees (yeast cells) to increase aromatic complexity and texture. The wine undergoes a light filtration prior to bottling. Each plot is vinified seperately so as to preserve plot specific nuances in the wine.
Taste
The nose is delicate and elegant. Aromas of mango, peach and lemongrass rivalling scents of spices. The wine is lush and full on the palate with minerality and hint of flint that is characteristic of this wine. Pale gold with hues of green in the glass.
