Description
Famille Paquet, situated in Mâconnais, was first established in 1980 by Jocelyn and Michel Paquet under the name Domaine des Valanges. Currently the estate is run by their three sons, Jean-Baptiste, Camille and Mathieu. They have expanded the estate as well as their portfolio making a range of wines that express the estate's terroir. The Domaine follows organic and biodynamic practices when caring for the vineyards and manage each of their 50 plots individually. The year 2021 marks the first vintage with an organically farmed certification.
The chardonnay grapes for the Mâcon-Villages are harvested from 5 different plots with south/south-east exposure. Within 20 minutes of harvest the grapes are put through a pneumatic press with no added sulphites. The must is then fermented in temperature controlled vats for 4-6 weeks. Use of indigenous yeast allows the grapes and soil to express their complexity. The wine is aged in stainless steel vats on fine lees for 6-7 months before release.

Taste
The palate appears rich, round, powerful and well-structured with notes of acacia honey, marzipan and spring flowers.
