Description
Mediterranean climate is influenced by the Atlantic Ocean resulting in large diurnal temperature changes. Vineyards are planted on south facing, mineral rich chalky-clay soils with excellent drainage and exposure to sun. The resulting wines are naturally balanced, concentrated in flavour and fresh with good ageing potential.
The grapes are hand harvested when the ideal balance between maturation and freshness are achieved. The fruit is carefully transported to the winery in 12Kg boxes. Grape bunches are hand sorted and gravity fed into stainless steel tanks where maceration takes place for 4 days at controlled temperatures followed by 10 days of fermentation.

Intense dark fruit and herbaceous aromas typical of these native varieties and our vineyards. Medium bodied with fresh acidity, elegant structure, and savoury fruit that carries through to a bright, persistent, salty finish.
